【Don’t have a shabu shabu pot?】
No worries, you can use a Japanese clay pot or an enameled cast iron pot (Le Creuset, Staub, Vermicular, etc) instead.
Since enameled cast iron pots are airtight, cooking with the lid on will keep the heat in, cooking more quickly and keeping the flavor of vegetables, crab, and meat intact.
【How to prepare?】
① Fill 70%of a large pot with water (approx.1.48qt). Put Rishiri Kombu in it and leave for 30 minutes to soak Kombu for the taste. Then put the pot on a stove top to heat.
Bring to simmer (small bubbles are coming up to the surface) and take the Kombu out before it starts to boil.② Add the Napa Cabbage first, then Shiitake, Enoki, and Tofu to the boiling pot. Leave the lid off and boil the vegetables until they soften.
③ Add the greens (Scallions and Water cress) when other vegetables are almost cooked.
④ When the color of greens gets brighter, you can start cooking the beef. Take one slice of beef at a time and swish it around in the hot pot for a few seconds or as long as you like, then dip it to your bowl of dipping sauce and enjoy. Scoop the cooked vegetables into your dipping sauce bowl, as well.

(Skim off and discard the foam as it forms for better flavor.)⑤ Cook Malony noodles and Mochi (rice cake) toward the end of the dinner, so that the broth in the pot won’t get cloudy too soon. Cook them until they get soft. Malony noodles do not need to be pre-cooked.
⑥ (Optional) To enjoy the soup more, add a dash of salt, pepper and a drop of soy sauce into the broth in your own bowl.
